Breakfast or Snack Egg Bites!
When you’re on the go, but want a high protein, easy to eat breakfast out the door or snack midday, opt for these egg bites! Easy to make, try them out!
Prep Time: 10 minutes | Cook Time: 25 minutes | Total Time: 35 minutes
1/2 Cup of Broccoli
1 Cup of Spinach
2 Small Potatoes
Salt & Pepper
Peel & dice 2 potatoes, place in bowl.
Peel & chop 1/4 onion, add to bowl.
Microwave broccoli (if frozen).
Chop broccoli, add to bowl.
Chop spinach, add to bowl.
Mix together and sauté in pan. Add a pinch of salt and pepper.
Preheat oven to 350*.
Crack and scramble 10-12 eggs in bowl. Stir sautéed mixture.
Turn off heat and add mixture back into bowl with eggs. Stir well.
Pour or ladle mixture into muffin tray.
Place in oven and bake for 25 minutes. Let cool.
Serve & enjoy!
